Pumpkin Toffee Chip and Rolo Chunk Cookies

Today we hit a milestone: I baked for the first time since Henry came into my life. Since Scott is headed back to work tomorrow, I figured I should send him back with some deliciousness to share with his co-workers. Being my first foray into baking with a baby, I decided to try something simple. Of course having my hubby and sister on hand to take care of Henry while I baked didn't hurt. Today's baking adventure is # 2 on my summer baking list: Pumpkin Toffee Chip and Rolo Chunk Cookies from Picky Palate.

The ingredients are simple: yellow cake mix, a can of pumpkin, 2 c. mini chocolate chips, 1 c. toffee bits, and 1.5 c. chopped Rolo candies.


Putting it all together didn't even involve my mixer (aka Bertha): just add ingredients to a bowl and mix until blended. 



The cookies don't spread much (I love a low maintenance cookie) so I was able to get 11-12 per cookie sheet.



The cookies with the Rolo candies ended up slightly less than attractive - caramel likes to spread as I discovered with the salted caramel chocolate cookies. However, these were much easier to get off the cookie sheets, once they'd cooled there for a bit.


Oh so simple, yet mighty tasty. 



Pumpkin Toffee Chip and Rolo Cookies

1 Box Yellow Cake Mix
One 15 ounce can Pumpkin
2 cups mini chocolate chips
1 cup toffee chips
1 1/2 cups chopped Rolo’s

1. Preheat oven to 350 degrees F. and line a large baking sheet with parchment or a silpat liner.

2. Place cake mix and pumpkin into a large bowl, mix to combine. Stir in chocolate chips, toffee chips and Rolo’s, mixing until combined. With a medium cookie scoop, scoop dough onto prepared baking sheet about 1 inch apart. Bake for 15-17 minutes until cooked through. Remove from oven and let cool on baking sheet for 10 minutes before transferring to cooling rack. Serve room temperature or chilled.

Makes 4-5 dozen cookies
