Now that we're starting to get into a routine with Henry (I know it won't exactly last) and Scott gets ready to go back to work, I've been thinking about some of the things I'd like to do this summer, particularly when I can't be spending time with my little one (namely, when he's sleeping). I was really enjoying the baking spree I went on in the weeks leading up to giving birth and I'd definitely like to continue that as soon as possible. There are always new recipes and ideas cropping up between the blogs I follow and Pinterest so in the interest of keeping myself on task and organized, I decided to make a list of 10 items I'd like to bake this summer. I feel like 10 is a reasonable goal, given my limited free time these days. I'm aiming for once a week, but we'll see how that actually turns out!
Cakey Peanut Butter Bars from Mmm...Cafe - I love the chocolate and peanut butter combination and this is a pretty easy cake mix alteration recipe.
Pumpkin Toffee Chip and Rolo Chunk Cookies from Picky Palate - this recipe could not look easier and it has several of my favorite things: toffee, pumpkin, and caramel!
Apple and Honey Challah from
Smitten Kitchen - this one's been on my "to bake" list for quite some time. My friend Fraser has made it a number of times and I've heard rumors of it's amazingness so I think this summer is the time to finally get to it.
Stroopwafel Cupcakes from Cakeje Van Eigen Deeg - don't worry, I haven't lost my love of cupcakes. This list wouldn't be complete without one cupcake recipe! Scott and I discovered the amazingness of the stroopwafel in Amsterdam 4 years ago so this recipe had to go on the list once I came across it. The recipe will require a few conversions, but I'm excited to give these a shot.
We shall see if I actually get to making all of these or if I'll get distracted by new and exciting recipes to try. Pinterest is a harsh mistress. I'll be sure to report back on any and all baking adventures if and when they happen!

I'm glad you like my cupcakes. Hope you do give 'm a try! Here's an easy instruction. Take your favorite vanilla cupcake batter, add some cinnamon and the stroopwaffles and you're ready to go ;)
